摘要:
目的对大枣不同加工部位中总糖和还原糖的含量进行测定,并推算出低聚糖和多糖含量。 方法通过苯酚-硫酸法及3,5-二硝基水扬酸(3,5-dinitrosalicylic acid,DNS)法对大枣浸膏、枣渣和粗多糖中总糖和还原糖含量进行测定。 结果大枣的总糖含量为52.14%,还原糖含量为36.90%,低聚糖和多糖含量为15.24%。还原糖占总糖含量的70.78%,低聚糖和多糖占总糖含量的29.22%。 结论苯酚-硫酸法及3,5-二硝基水扬酸法可以用于大枣浸膏、枣渣和粗多糖中总糖和还原糖含量测定,并通过总糖与还原糖含量之差,反映出低聚糖和多糖含量。这可为脱糖大枣的研究提供参考。
Abstract:
ObjectiveTo detect the contents of total sugar and reducing sugar in different processing parts of jujube, and calculate the contents of oligosaccharides and polysaccharides. MethodsThe contents of total sugar and reducing sugar in jujube extract, residues and crude polysaccharide were measured by phenol-sulfuric acid method and DNS method. ResultsTotal sugar content of jujube was 52.14%, the contents of reducing sugar was 36.90%, the contents of oligosaccharides and polysaccharides was 15.24%. Reducing sugar accounted for 70.78% of the total sugar content, oligosaccharides and polysaccharides accounted for 29.22% of the total sugar content. ConclusionPhenol-sulfuric acid method and DNS could be used for content determination of total sugar and reducing sugar in jujube extract, residues and crude polysaccharide, the contents of oligosaccharides and polysaccharides are reflected through the differences of the contents of total sugar and reducing sugar. It could provide the reference for the study on sugar free jujube.
