摘要:
目的分析不同产地奇亚籽的组分及其对肠道收缩推进能力的影响。 方法通过对美国产奇亚籽、墨西哥产奇亚籽的营养成分含量(还原糖、脂肪、游离态脂肪酸、蛋白质)、物理性质(膨胀率、黏度)及生理特性(对在体、离体肠管的作用)的测定,比较不同产地之间奇亚籽的不同。 结果墨西哥产奇亚籽与美国产奇亚籽的还原糖、游离态脂肪酸含量基本一致;墨西哥产奇亚籽脂肪、蛋白质含量均高于美国产奇亚籽;相同温度下,美国产奇亚籽膨胀率、黏度均高于墨西哥产奇亚籽,两者均在60 ℃时黏度最好;美国产与墨西哥产奇亚籽对离体肠管的运动和在体肠管的推进均有抑制作用,且美国产奇亚籽对肠管的抑制作用强于墨西哥产奇亚籽。 结论不同产地奇亚籽营养成分呈现一定差异性;美国产奇亚籽更易于泡发且成糊性较好;美国产奇亚籽可能通过兴奋β受体发挥抑制肠道蠕动的作用。
Abstract:
ObjectiveTo analyze the components of Chia seeds from different habitats and its influence on intestinal contraction propulsion. MethodsThe differences in Chia seeds from different habitats were compared by determining the contents of nutritional ingredients (reducing sugar, fat, free fatty acids and protein), physical property (expansion rate, viscosity) and physiological property (effects on intestine in vivo and in vitro) contained in Chia seeds grown in America and Mexico. ResultsThe contents of the reducing sugar and free fatty acid of Chia seeds from Mexico and America were basically the same; the contents of fat and protein contained in Chia seeds from Mexico were higher than these in the seeds from America; at the same temperature, the expansion rate and viscosity of Chia seeds from America were higher than these of the ones from Mexico, and both showed the best viscosity at 60℃; Chia seeds from Mexico and America had the inhibitory effects on the movement of the intestines in vitro and the propulsion of the intestines in vivo, and the seeds from America show stronger inhibitory effects on the intestine compared with the ones from Mexico. ConclusionChia seeds from different habitats present certain difference in nutritional ingredients; Chia seeds from America are easily soaked and in better pasting; American Chia seeds could give play to the effects of inhibiting intestinal peristalsis possibly through exciting β receptors.
